Great sauces

Great sauces need to be made with love and time. Over the weekend I grilled up some short ribs and chicken over hickory coals/fire. I should have cooked the meat slower and higher over the coals however time was limited due to bad weather. Once everything was cooked and we ate the BBQ I noticed that the hickory flavor was not as strong as I would have liked. I then took all the meat off the bones and created a wonderful stew with potatoes, onions and peppers. I added salt and a tomato paste base to the mix. It simmered for hours and then rested in my refrigerator for 3 days. Wham...... Hickory flavor was intense and no BBQ sauce required. Try to beat that with gourmet or any fancy food. NY Fancy Food Show

At the NY Fancy Food Show, people were everywhere, and everyone was interested in expanding their business.  We meet with over 200 food vendors over the day and a half that we were there, if we had the time to spend the three days at the show we would have meet more food vendors and food manufacturers. There were a wide variety of food vendors from all over the world looking for distributors in the USA. We were particularly impressed with the food vendors from Italy for the professionalism and layout in the show.
